Cauliflower Tots

Lately I've really been loving cauliflower so I thought I'd try a recipe that involved them, but in a fun way! A plus for these is that they're low-carb and pretty easy to throw together for a healthy snack.

A couple of key notes I'd recommend from making these is definitely to make sure the tots are properly steamed so that they're somewhat mashable. Otherwise they won't stay in a ball form and will just crumble apart. Because I didn't steam them enough before I mixed all the ingredients, I heated them again and I found that melting the parmesan cheese really helped them stay together! So, try them any way you see fit, but just be sure they're holding in a ball.

Overall though I'd definitely make these again. They weren't very flavorful (maybe because I substituted onion powder for garlic powder) so I might add some more salt/pepper next time. But then dipping them in some ketchup was just right. Let me know if you try them!
