Happy October! Here's a sandwich to go with one of my favorite months of the year! And thank heavens for pesto! If I had to do without it for this sandwich, it probably wouldn't have turned out quite the same. But seriously, try this one!

Ingredients

> 2 slices of Bread

> Pesto

> 2 slices of Cheese

> Baby Spinach

> 1/2 Avocado

I used honey wheat bread and with this recipe, the creator used mozzarella cheese, but as it was unavailable for me, I used Havarti. If you think about what cheese goes well in a grilled cheese, you can make your own choice about what type you'd like to use. I was just really excited to try the sandwich. For the avocado, I used as much as I needed (and then some) to cover one slice.

When I say this was the most amazing sandwich, I'm not under exaggerating. It's even tastier than the Avocado Pizza Sandwich I tried out in May.
