Mini Avocado & Hummus Tacos

Tuesdays are for tacos. That's what I thought when I made these, mainly because of alliteration, but honestly, I would make these any day of the week. And okay, maybe they're more like quesadillas but from the way they turned out, they could go either way. Aaand even though I was making a mess trying to figure out how to make them,...-whisper- They're Super EASY!

Ingredients
> 4 whole wheat tortillas
> 1/4 cup hummus
> 1/4 tsp ground cumin
> 1 tbsp minced cilantro
> 1/2 avocado
> cheese
The instructions are rather straightforward. Mix the hummus, cumin, and cilantro in a bowl and add a tablespoon (no more!) to the cut-out tortilla circles. I used some can we had that doubled as a cutter to score the tortillas then set them out. Then add a small piece of avocado, crumble on the cheese (I grated mine), and cook in a pan.



For the cheese, I used what I had available (a small cube of Monterey Jack) and shredded it across the quesadillas, but I think it's important to have enough cheese to keep everything together.

The short of it is, you have to try making these little tacos of goodness; With the amount I love avocados and hummus, these were bound to be delicious. But don't always take my word for it! (That's code for 'try it yourself.')
