Apple Pie Breakfast Cookies

Autumn is here and I am so very excited to start up the apple and pumpkin recipes again! This is my favorite season after all.

Cutting up an apple

For the apples:

> 2 cups of chopped apple (1 apple)

> 2 tbsp maple syrup

> 1 tsp cinnamon

Mixing dry and wet ingredients

For the cookies:

> 2 cups old-fashioned oats

> 1 cup flour

> 1/2 cup ground flaxseed

> 1 tsp cinnamon

> 1/2 tsp nutmeg

> 1/2 tsp baking soda

> 1/2 tsp salt

> 3/4 cup unsweetened applesauce

> 1/3 cup honey (or maple syrup)

> 1 large egg

> 2 tsp vanilla extract

> 1/4 cup (4 tbsp) unsalted butter, melted and cooled slightly

Scoop 'em!

To scoop them onto the baking sheet, I used a 1/4 cup and ended up with 11 and 1/2. So if you want to be a little more liberal with the amount of oatmeal you use or make them smaller, either way wouldn't hurt.

I put the cookies in for 12 minutes at first (the minimum recommended by the recipe). Then for another 3.

They weren't as sweet as I thought they'd be, but honestly I didn't mind. They were good and I only ate two before I was full, hence they are a good breakfast food.
