No-Cook Veggie Tacos

I happened upon this recipe in my never-ending hunt for healthy food recipes and I have to say, I think I've hit a winner on this one! Despite the fact I suffered by cutting up an onion, I will say this meal is simple, easy, and definitely healthy.
Ingredients

> (small) handful of finely chopped cilantro
> 1/2 cup smashed avocado (equals about one whole small avocado)


> 1/2 cup chopped tomato
> 1/4 cup chopped purple cabbage
> 1/4 cup finely chopped red onion
> 1/4 cup cubed grapefruit
> 1/4 cup cubed mango
> 1 cup black beans
> tortillas (3)
This makes enough for a few more than three wraps so don't stress if you have leftover [we'll call it] "salsa."
The salsa was definitely a "season-to-taste" type because the grapefruit gave it a really acquired taste. But I was obsessed with all the colors in that one little bowl. I promise you, I took about twenty pictures.


I think the salsa would've been a little more colorful (and sweeter) with a mango like the original recipe suggests, but when I shopped for the ingredients, mangos weren't in season. But the great thing about this recipe is that it's flexible. You can include any combination of these ingredients that you like or have available.


You don't have to heat up the tortillas in a pan like the original recipe says, but I did; It gave the tortillas some crispness that you can't get from a microwave. I also threw the black beans in the pan as opposed to putting them on the wrap cold. I felt it would balance the coolness of the salsa, which it did nicely.


In the end, I would say, leave the grapefruit as optional. I think were mangos in season when I was making this, the two fruits would've balanced each other out, but unless you drain the grapefruit juice a little from the salsa (like I did), it will overpower your taco. However, I could hardly taste it once I mixed it with the avocado and beans. So, use your own judgement when it comes to this interesting-flavored fruit.


This was good though! I packed up the extra to bring with me to my theatre shows as a lunch so it was a nice on the go meal! I will most definitely be making this again and next time, with mango!
