Pumpkin Pancakes

What is better for a fall recipe than pumpkin pancakes? I was definitely excited to make these and I hope you will be too!


Dry Ingredients
> 1 cup flour (I used whole wheat)
> 2 tbsp sweetener
> 1 tsp baking powder
> I tsp baking soda
> 1 tsp cinnamon
> 1/2 tsp allspice
> 1/4 tsp nutmeg
> 1/8 tsp ground cloves

Wet Ingredients
> 1 egg
> 1 tbsp coconut oil
> 1 1/2 tsp vinegar
> 1 cup milk
> 1 cup pumpkin puree
Instructions
> Mix wet and dry ingredients separately.
> Add pumpkin puree to wet ingredients. > Combine wet to dry ingredients until well mixed.
> Fry in a pan with a little extra coconut oil or butter on low.
> Top with butter and syrup!

Notes
> Spread the pancake out quite a bit in the pan as the mix is very thick.
> Definitely keep the heat low. It will help the pancake cook more evenly.
> Something I noticed is that I only needed butter for the first pancake. After that, any coconut oil in the pancakes created enough "grease" in the pan.
