Black Bean and Mango Salad

I just finished watching Netflix's "A Series of Unfortunate Events" and I have to say, I loved it, especially since my camp name from this past summer, Violet, was inspired by the eldest Baudelaire. Although I have yet to read the books, I wanted to create a recipe inspired by the series. It would seem that this is a meal Beatrice Baudelaire made when she was short on time, so I am going to see just how much effort it takes to make it myself.

Ingredients

~ 1 tsp cumin​​

~ 1 tsp chili powder

~ 1 tsp minced garlic

~ salt and pepper to taste

~ 2 tsp lemon juice (approx.)

~ 1 tbsp olive oil

~ 1/2 cup red bell pepper

~ 4 green onions thinly sliced

~ 1 cup canned black beans

~ 1 cup canned corn

~ 1 mango, peeled and cubed

~ 5 1/2 cups chopped lettuce

Steps

1. Combine the cumin, chili powder, garlic, salt and pepper, lemon juice (preferably squeezed from a fresh lemon), and olive oil in a bowl.

2. Prep, chop, and dice all other ingredients in a separate bowl

3. When ready to serve, toss the dressing with the salad

Apart from some simple prep work, this recipe was amazingly easy and my parents and I enjoyed it for dinner. The dressing is enough to coat the salad evenly, but adding some extra is fine if you desire more flavor.
