Corn & Black Bean Salad

I eat pretty much the same thing every day; I won't say this is the reason I don't try new recipes, but I've found something that works for me and I'm sticking to it. However, it's been a while since I've tried making something new and by a desire to budget better and cut back on the amount of meat I buy for each week's meal plan, this recipe emerged!

I found it on YouTube of all places and it's really quite simple. I will say, the amount it makes is enough for a small party, but I actually found this helpful, as it allowed me to eat it daily throughout the week.

Ingredients

> 1 can of corn (or 2 cups frozen)

> 2 cans of black beans

> 2 roma tomatoes

> 1 red bell pepper (I used small, bite-sized red, orange, and yellow ones that we had in our fridge, which made it very colorful

> 1/4 to 1/3rd of a red onion

> 2 cloves minced garlic

> 1 large avocado (Because I was eating this throughout the week, I only added avocado to my individual meals; This also kept the avocado from going brown)

​​> 1/4 cup lime juice

> 1/4 cup extra virgin olive oil

> about a 1/2 tsp of salt

Optional

> 1/2 cup cilantro

> 1/2 tsp red papper flakes

Steps

1. If your corn kernels are frozen, microwave heat them for 3-4 minutes, stirring occasionally to break up any chunks.

2. Dump them into a large bowl along with black beans, drained and rinsed.

3. Dice the Roma tomatoes, bell pepper, red onion, cilantro, and avocado.

4. Juice a lime to keep avocados from turning brown.

I put lime juice on it even though I didn't add the avocado but per meal.

5. In a small bowl, whisk together the lime juice, olive oil, minced garlic, salt, and red pepper flakes.

I kinda just did this my own way, which meant I was eyeballing how much to add according to how I liked it and I added it straight to the bowl, not wishing to wash another bowl. Also, I did not add the red pepper flakes. Also, I found I had to add more salt as I ate a bit at a time. A very sustaining meal!
